My Favorite Way to Cook Spaghetti Squash

Ingredients:

(feel free tweak it to your liking or make less, i just prefer to cook large amounts for future meals)

  • 2 spaghetti squash
  • 3 zucchini
  • 1/2 cup of mushrooms
  • 2-3 light Queso Fresco & Chipotle Laughing Cow cheese wedges
  • 2-3 light Garlic & Herbs Laughing Cow cheese wedges
  • extra virgin olive oil
  • salt
  • pepper
  • garlic powder

Servings: Makes approximately 7-8 cups. 

Calories per serving: ~100 calories per cup

Instructions:

  1. Split spaghetti squash in half, place on baking sheet, season squash w/ extra virgin olive oil, salt, pepper, garlic power. Place in oven and cook at 375 degrees for 1 hour. 
  2. While the squash is cooking, chop up your veggies. Season veggies w/ salt, pepper, garlic powder, and a bit of olive oil. Sauté to your liking. 
  3. Melt in the laughing cow cheese wedges. 
  4. Once your squashes are ready, remove from oven & run a fork through the halves to create the spaghetti-like strands. 
  5. Combine the spaghetti squash & cooked veggies. 
  6. Serve & enjoy!

It is so so yummy! I have made it each of the last 2 weeks. Love how tasty, filling, and low calorie it is!
